A Fabulous Way to Start Your Day!
I recently became a rowing Mum. Not a Mum who rows. Just the one who gets up at 4 two mornings a week to transport a child across town. Life-changing for the someone who is not a morning person. First morning I stumbled out of bed into the pitch blackness, shocking myself by looking in the bathroom mirror. Why does getting up early make my hair so crazy? Wet it down. Then looked like I’d been electrocuted AND drowned. Great. In a community full of tall , thin, immaculately dressed, beautifully made up blondes, enter the short, voluptuous, hair challenged brunette. Still wearing her pyjamas.
The early starts have had an impact. Dogs are loving it – more human time! Sadly, Pip and Charlie cannot read a calendar to know which days rowing is on. So, early waking by dogs EVERY day. Did I mention I’m not a morning person??? Then there is the realisation of just how long the day is going to be. Used to start the day with just coffee. I know, most important meal of the day etc etc, but I just couldn’t face breakfast. Now, with the extra hours in the morning, I found myself turning into a Hobbit – one breakfast was not enough! With my arse spreading rapidly with the extra intake, I needed to find some alternatives. Enter Coconut Chia Breakfast Pudding. Pudding for breakfast?! Yes!!
Chia is a superfood. Nutrient dense and rich in fibre, protein, omega 3 fats, vitamins and minerals. It’s good for your skin and anti-aging, promotes digestive and heart health, and boosts energy and metabolism. About the only thing it can’t do is bring world peace. Yet. So why the hard sell? Because in the words of Mr L, it looks like frog spawn. I first encountered Chia pudding when we went out to brunch with cousins. Brunch is a favourite for Mr L. He loves pancakes. He loves crispy bacon. He loves poached eggs. So where did we go? Vegan cafe. Hmm. Less than impressed teen. But it gave us a chance to branch out, with me ordering Coconut Chia Breakfast Pudding.
Loved it! In fact, could not finish the serving. And you can see Sol cleverly cover the “frog spawn” with flowers and goji berries? Got to experimenting straight away and have come up with an easy way to prepare. I use unsweetened coconut milk, black chia seeds (I like the contrast), a little vanilla and something sweet like honey or maple syrup.
Mix all together in a glass bowl, let stand for 30 minutes. Then give another stir – this ensures that the seeds are evenly distributed – and pop in the fridge overnight. Too easy! The Chia pudding will keep in the fridge for four days, so your breakfast is sorted for the week!
I serve about 1/3 cup of Coconut Chia Breakfast Pudding with fruit and yoghurt. Add in some toasted coconut, nuts or granola for some crunch, and breakfast is served. Getting tired of the same flavour? Tried blending through some berries with the coconut milk or swapping for almond milk. Great light and tasty way to start your day that will keep you going.
- 2 cups unsweetened coconut milk
- ½ cup chia seeds
- ½ teaspoon of vanilla bean paste (or 2 tsp vanilla extract)
- 1 tablespoon honey or maple syrup
- In a glass bowl, gently whisk coconut milk, vanilla and honey together. Add chia seeds and stir. let stand for 30 minutes.
- Stir again. this will prevent chia from dropping to the bottom and distribute thoroughly. Cover and refrigerate overnight.
- Serve with seasonal fresh fruit, yoghurt and a drizzle of honey or syrup if desired
